We didn’t start this to sell honey. We started it because no one could tell us what was actually inside the jar — so we decided to find out, and to publish whatever we found, even the parts that don’t flatter us. That’s the whole project. Honesty first, the harvest second.

The bees know this forest far better than I do. My work is only to keep them strong and take a little of what they can spare — never all of it. Leave the colony enough to last the winter, and the honey it gives back is honest. That is the only way I know to keep bees.
